Ingredients:
1 whole chicken (3 lbs)
2 tsp. salt
1 tsp. Watkins Paprika
3/4 tsp. Watkins Cayenne Pepper
3/4 tsp. Watkins Garlic Peppercorn Blend
1/2 tsp. Watkins Onion Granules
1/2 tsp. Watkins Thyme
1 large onion, quartered or whole
Cooking Instructions:
Combine all spices together in a small bowl. Dry the chicken. Rub mixture into chicken well, inside and out, patting into the skin evenly. Put in a large bag and refrigerate overnight. (If you don’t have time for this step it will still be delicious!)

Preheat oven to 250 degrees. Just before roasting, stuff the cavity with onion.) Note from Chef Sharon: If the onion will fit into the cavity whole, do it this way; we love baked onions!) Secure with toothpicks.

Roast uncovered for 5 hours. (Yes, 5 hours!) Baste occasionally with pan juices, about every 30 minutes for the last 2 hours, until they caramelize in the pan. This is the most important step, so do not skip it. The chicken will turn golden brown.
